The Ultimate Guide to Chicken Marinades
A good marinade transforms chicken from bland to brilliant. The key is acid, oil, and flavour โ balance these three elements and you have a winning marinade every time.
How Marinades Work
Acid (lemon juice, vinegar, yoghurt) breaks down protein fibres, making chicken tender. Oil carries fat-soluble flavours and prevents dryness. Salt draws flavour into the meat. Always marinate in the fridge and never reuse marinade that has touched raw chicken.
1. Lemon and Herb Marinade
- Juice of 2 lemons
- 3 tablespoons olive oil
- 3 crushed garlic cloves
- Fresh or dried thyme, rosemary, and oregano
- Salt and black pepper
Marinate for 2โ4 hours. Great for grilling or roasting.
2. Yoghurt and Spice Marinade
- 4 tablespoons plain yoghurt
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- Juice of 1 lemon
- Salt and chilli flakes

- 50g melted butter
- 4 garlic cloves, minced
- Fresh parsley
- Salt and black pepper
- Squeeze of lemon

- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 2 tablespoons olive oil

- 100ml coconut milk
- 2 teaspoons curry powder
- Juice of 1 lime
