How to Cook Perfect Rice Every Time
Rice is one of the most eaten foods in the world, yet getting it perfectly cooked every time can feel tricky. Follow these simple steps and you will never have overcooked or undercooked rice again.
The Right Water Ratio
The golden rule for long-grain white rice is 1 cup of rice to 1.5 cups of water. For brown rice, use 1 cup rice to 2 cups water. Basmati rice works best at a 1:1.5 ratio with a 10-minute rest after cooking.
Rinse Your Rice First
Always rinse rice under cold water until the water runs clear. This removes excess starch that causes rice to become sticky and clump together. This step takes 30 seconds and makes a big difference.
The Absorption Method
- Add rinsed rice and cold water to a pot
- Bring to a boil over high heat
- Reduce to the lowest heat, cover tightly
- Cook for 12 minutes (white rice) or 35 minutes (brown rice)
- Remove from heat and rest, covered, for 5 minutes
- Fluff with a fork before serving
Common Mistakes to Avoid
- Never lift the lid while cooking โ steam escape causes uneven cooking
- Do not stir rice while it cooks โ this releases starch and makes it mushy

Flavouring Your Rice
Boil rice in chicken or vegetable stock instead of water for extra flavour. Add a pinch of turmeric for colour, or toss in a cinnamon stick and cardamom pods for fragrant rice.
Fixing Undercooked Rice
If your rice is still crunchy, add 2 tablespoons of water, cover, and steam on low for 5 more minutes. Works every time.
